Exclusive product of the land. Never has such a designation been this precise. Beating their wings to the rhythm of the seasons, the bees responsible for Miels d’Anicet’s honey travel collectively, on average, 50,000 km over a pesticide-free, chemical fertilizer-free and GMO-free land. To produce 500g of honey, bees gather pollen from 3 to 9 million plants and wild flowers, all indigenous to Ferme-Neuve in the Mont-Laurier region. This land has maintained a richly diversified population of wild flowers throughout the years, in quality as well as in variety, which is almost unique in Québec.
Nothing artificial. Nothing industrial. Nothing added. All is done according to the age-old craft of apiculture where bees are treated like queens and, in respect for their titanic work, honey is harvested like a gift from the gods.
Beekeepers used to sell honey in its raw state, never pasteurized nor filtered. Honey is a natural sweetener made by bees from the nectar of wild flowers and it is also an antioxidant rich in minerals, carbohydrates, micronutrients and enzymes. Honey supplies the necessary ingredients for an active, healthy life.
Miels d’Anicet honeys are cold-extracted which ensures the preservation of aromas and of their nutritional and medicinal values. The recipe is simple: minimize human manipulation and keep honey in its purest form! Organic honeys crystallize faster because crystallization is a natural phenomenon and a sign of quality. When honey crystallizes, a simple bain-marie will bring it back to liquid.

Seasonal Honeys

Spring Honey: Not Pasteurized
Mildly spicy and rich in pollen, the freshness of spring honey blossoms from the aroma of dandelion, cherry and wild cherry trees. Velvety and luscious taste.

Summer Honey: Not Pasteurized
Harvested from July to mid-August. With its fine and delicate taste, summer honey delivers a real flower power finish. Richly scented by white clover, melilot, raspberry bush, alfalfa, linden, and wild flowers. Absolutely delectable.

Fall Honey: Not pasteurized
Rich and full bodied, fall honey draws its medicinal properties from goldenrods, asters, and wild flowers. Rich in minerals, enzymes, and vitamins, fall honey also stimulates the immune system. Force of nature.

Raw Honey: Not Pasteurized
Harvested from mid-August until the end of September. Never filtered nor heated, raw honey is healthful because it retains traces of pollen, propolis, beeswax, and all its original properties and aromas. This raw honey crystallizes in the jar and it should be taken in this state

Creamy Honey: Not Pasteurized
Churned for consistency, this creamed honey reveals a fine and delicate finish while maintaining all the floral aromas and properties of summer honey. Divinely unctuous.

With exclusive aromas from selective flowerings, all our speciality honeys are defined by their exquisite and unique flavours. These vintage honeys are available in limited quantities because they are dependent upon the bees selection of a particular flowering.

Linden: Not Pasteurized
No added flavours. Invigorating freshness for all seasons, linden and wild mint honey transforms teas, sauces and desserts into divine feasts of incomparable flavour.

Buckwheat Honey: Not Pasteurized
Ideal for fans of full bodied honey. Its spicy and savoury taste is dependent on neighbouring flowerings. Exquisite in pastries, this honey is a formidable flower power.
