Our first honey harvest 2022 has beautiful notes of wild berries, cherry trees and other flowers. Tasty taste of green apple and beeswax with a barley sugar side!

Taste description

Harvested at the end of July, with a fine and delicate taste, summer honey is truly a floral explosion in taste. Made mainly from clover, linden, brassicas and wild rasberry blossoms, it’s also made from a multitude of wild flowers, abundant in the Upper Laurentians in July. A fresh and minty taste originating from the linden’s nectar is also noticeable. Our 2021 harvest has also some honeydew in it, hence a more light brown color and a slightl caramelized taste.

Never filtered or heated, raw honey is excellent for the health, because still containing traces of pollen, propolis and beeswax and preserving its original properties and aromas. Freshly harvested, it is in a liquid state. It will then crystallize quickly and nicely given the absence of heat in the extraction process.
