Turkish golden sesame is perfect for this recipe; the key is to roast the sesame seeds to bring out their unique flavor. You can always omit the salt for a purely sweet version.

We recommend using a mild summer or autumn honey for a perfect pairing with the taste of sesame.

Ingredients

  • 2 cups sesame seeds
    8 tablespoons sugar
    6 tablespoons honey
    ½ teaspoon salt

 

Preparation

  1. Line a baking sheet with parchment paper. Set aside.
  2. Heat a large skillet over medium-high heat. Add the sesame seeds and toast them, stirring continuously with a spatula, for 3 to 4 minutes. Add the sugar and mix well (the sugar should start melting immediately). Pour in the honey and continue to stir for 2 minutes to caramelize everything properly.
  3. Pour over the parchment paper and spread it evenly. Flatten with a spatula to form a uniform disc. Let it cool for 15 minutes. Break into pieces and store in a jar if you don’t use it all quickly (which is unlikely!).
