After a short absence, here is the 3rd vintage of our collaboration with Bar Darling. This year, the earliness of the season led us to innovate by working part of the cheekbones with carbonic maceration. A facet that reinforces the aromatics of the fruit, reduces the biting acidity without losing its tonic and refreshing character.
Method
Carbonic maceration of the cheekbones (10% of the blend) – 1 week
Pellicular maceration – 4 weeks
Spontaneous fermentation (vat and barrels) – 1 month
Aging in vats (90%) and in barrels (10%) – 4 months
Aging in bottle – 2 months
