HONEY TYPE
Linden honey, organic raw honey (Miels d’Anicet)
DESCRIPTION
The purest expression of linden honey from the Hautes-Laurentides. Notes of pollen, limoncello and elderflower stretch lengthwise over fine bubbles. A satiny texture and a subtle roundness balance this impression of stepping out into nature from a bath of fresh nectar, embellished with dried flowers.
It is clearly the summer wine to have on hand for your next festive aperitif! It is the one, too, that you must offer to surprise someone around you who loves wine and who wants to open up to new sensations.
METHOD
• Slow cold maceration of water and honey
• Natural fermentation on pollen sourdough
• Natural foaming, ancestral method in closed vats – 1 month
• Light stirring – 2 months
• Aging on total lees for 12 months,
• Isobarometric bottling.
